Slim Chickens, a restaurant chain with roots in Fayetteville, Arkansas, has plans to open a Lubbock location later this year.
Where the new store will be or when it will open are not yet set in stone, but local franchisee Chris Wilson said he is hoping to have the new restaurant up and running in October.
The poultry-specialized eatery only has one other restaurant in the state and Wilson said he looks forward to introducing the concept to West Texas.
